Kacchi-style dum biryani is a sequence. Each step only works because of the one before it.

Build the marinade
Kacchi-style dum begins with meat resting in yoghurt, aromatics and spice before it meets the rice.

Layer & seal
Half-cooked basmati goes over the raw marinade with mint, saffron milk and ghee. The lid is sealed shut with dough.

Let steam do the work
The sealed pot holds in steam, allowing the meat and rice to cook together and exchange flavour.
